Jacket Sweet Potatoes With Black Beans

So simple, so quick, so tasty and super kid friendly too! This recipe is great served with salad, extra veggies or just on its own. They're also awesome served hot or cold!
Servings 2 people



  1. Oven to 200.
  2. Large saucepan of water on boil.
  1. Boil the sweet potato whole until they're soft right the way through.
  2. Allow them to cool enough to be handled.
  3. Slice each sweet potato in half length ways.
  4. Using a large spoon, carefully scoop out the center without tearing through the skin. I usually try to leave about 1cm of flesh around the skin.
  5. Combine the sweet potato flesh & the remainder of ingredients in a bowl (except cheese).
  6. Spoon the filling back into the sweet potato cases & bake them on a lined tray in the oven until the cheese is crunchy.
